# What You'll Need:

01 - 14 oz spicy sausage (e.g., chorizo or Italian), sliced

→ Vegetables

02 - 1 large onion, diced
03 - 2 cloves garlic, minced
04 - 1 red bell pepper, diced
05 - 1 carrot, diced
06 - 2 celery stalks, diced

→ Beans

07 - 2 cans (14 oz each) mixed beans, drained and rinsed

→ Liquids

08 - 14 oz can chopped tomatoes
09 - 2 cups chicken or vegetable broth

→ Spices & Herbs

10 - 1 tsp smoked paprika
11 - 1/2 tsp ground cumin
12 - 1/2 tsp chili flakes (adjust to taste)
13 - 1 bay leaf
14 - Salt and freshly ground black pepper, to taste

→ Oils & Garnishes

15 - 2 tbsp olive oil
16 - Fresh parsley, chopped (for garnish)

# How to Make It:

01 - Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
02 - In the same pot, add onion, garlic, bell pepper, carrot, and celery. Cook for 5 to 7 minutes until softened.
03 - Stir in smoked paprika, ground cumin, chili flakes, and bay leaf. Cook for 1 minute until fragrant.
04 - Return sausage to the pot. Add chopped tomatoes, mixed beans, and broth. Stir thoroughly.
05 - Bring mixture to a boil, then reduce heat to low. Cover and simmer for 25 to 30 minutes, stirring occasionally.
06 - Remove bay leaf. Season with salt and freshly ground black pepper to taste.
07 - Ladle stew into bowls, garnish with chopped fresh parsley, and serve hot.
