# What You'll Need:

→ Olives & Cheese

01 - 1 1/2 cups mixed olives (green and black, pitted)
02 - 7 oz feta cheese, cut into 1 cm cubes

→ Marinade

03 - 3 tbsp extra virgin olive oil
04 - 1 tbsp freshly squeezed lemon juice
05 - 1 tsp dried oregano
06 - 1 tsp fresh thyme leaves (optional)
07 - 1 small garlic clove, thinly sliced
08 - 1/2 tsp red pepper flakes (optional)
09 - Freshly ground black pepper, to taste

→ Garnish

10 - 2 tbsp fresh parsley, chopped
11 - Zest of 1/2 lemon

# How to Make It:

01 - In a medium bowl, combine the mixed olives and feta cubes.
02 - In a separate small bowl, whisk together olive oil, lemon juice, oregano, thyme (if using), garlic, red pepper flakes, and black pepper.
03 - Pour the marinade over the olives and feta. Gently toss to coat evenly, taking care not to break the feta cubes.
04 - Cover and refrigerate for at least 30 minutes, up to 4 hours for enhanced flavor.
05 - Bring to room temperature before serving. Sprinkle with fresh parsley and lemon zest. Toss gently and serve.
