15 - 1/4 cup grated parmesan cheese (optional)

# How to Make It:

01 - In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
02 - Add melted butter and salt to the yeast mixture. Gradually mix in flour until a soft dough forms.
03 - Knead dough by hand or with a mixer for 5 to 7 minutes until smooth and elastic.
04 - Transfer dough to a greased bowl, cover, and let rise in a warm place for 30 to 40 minutes until doubled in size.
05 - Preheat oven to 425°F. Line two baking sheets with parchment paper.
06 - Divide risen dough into 32 equal pieces. Flatten each piece, place one cube each of mozzarella and cheddar in the center, then pinch edges to seal.
07 - In a large pot, bring 8 cups of water to a boil. Carefully add baking soda; it will foam.
08 - Gently drop pretzel bites into the boiling soda bath in batches for 20 to 30 seconds. Remove with a slotted spoon and place on baking sheets.
09 - Bake pretzel bites for 12 to 15 minutes or until deep golden brown.
10 - While baking, mix melted butter, minced garlic, parsley, and salt.
