Overnight oats with grated carrot, warm spices, walnuts, and maple for a breakfast that tastes like carrot cake.

# What You'll Need:

→ Oats Base

01 - 1 cup old-fashioned rolled oats
02 - 1 cup milk (dairy or plant-based)
03 - 1/2 cup plain Greek yogurt
04 - 2 tablespoons maple syrup or honey
05 - 1/2 teaspoon vanilla extract

→ Carrot Cake Mix-Ins

06 - 3/4 cup finely grated carrot (about 2 small carrots)
07 - 1/2 teaspoon ground cinnamon
08 - 1/8 teaspoon ground nutmeg
09 - 1/8 teaspoon ground ginger
10 - 1/4 cup chopped walnuts
11 - 2 tablespoons raisins (optional)
12 - Pinch of salt

→ Toppings (optional)

13 - Additional chopped walnuts
14 - Shredded coconut
15 - Drizzle of maple syrup
16 - Dollop of Greek yogurt

# How to Make It:

01 - In a mixing bowl or jar, combine the rolled oats, milk, plain Greek yogurt, maple syrup (or honey) and vanilla extract. Stir until the mixture is smooth and evenly blended.
02 - Add the grated carrot, cinnamon, nutmeg, ginger, chopped walnuts, raisins if using, and a pinch of salt. Fold gently until all components are evenly distributed.
03 - Divide the mixture evenly between two airtight jars or containers, leaving a little headspace to allow for expansion.
04 - Seal the containers and refrigerate for at least 8 hours to allow the oats to soften and the flavors to meld.
05 - Stir the oats well before serving. If a looser texture is preferred, add a splash more milk and stir. Top with additional walnuts, shredded coconut, a drizzle of maple syrup or a dollop of Greek yogurt as desired; serve chilled.

# Additional Tips::

01 -
  • This secretly tastes like cake, but fuels you like a nourishing breakfast—that's my favorite kitchen magic.
  • It's easy to adapt for whatever you have on hand and keeps well, so you're never stuck without a quick, cozy meal.
02 -
  • Skip grating the carrots finely and you’ll crunch through raw bites—trust me, go for the ultra-fine side of your grater.
  • Letting it rest overnight is truly non-negotiable—the oats need all those hours to soak and soften.
03 -
  • Toast your nuts before adding them—ten minutes in a hot pan does wonders for their depth and crunch.
  • If you want a real bakery vibe, add a pinch of orange zest to the mix; it’ll make the flavors pop and everyone will ask what your secret is.
