Avocado Toast Grilled Cheese (Print Version)

A creamy avocado spread paired with melted cheese on golden toasted bread.

# What You'll Need:

→ Bread

01 - 4 slices sourdough or whole grain bread

→ Avocado

02 - 1 large ripe avocado
03 - 1 teaspoon lemon juice
04 - Salt and freshly ground black pepper, to taste

→ Cheese

05 - 4 slices cheddar cheese (or Gouda, Monterey Jack, or preferred melting cheese)

→ Butter

06 - 2 tablespoons unsalted butter, softened

# How to Make It:

01 - In a small bowl, mash the avocado with lemon juice, salt, and pepper until smooth with slight texture.
02 - Arrange bread slices and spread a thin layer of softened butter on one side of each slice.
03 - Flip two slices so buttered side faces down; evenly spread mashed avocado on the unbuttered side of these slices.
04 - Place two slices of cheese over the avocado on each piece of bread.
05 - Top with remaining bread slices, buttered side outward, forming two sandwiches.
06 - Heat a nonstick skillet or grill pan over medium heat.
07 - Place sandwiches in the skillet and cook 3–4 minutes per side, pressing gently, until bread is golden and cheese melted.
08 - Remove from heat, let cool slightly, slice in half, and serve immediately.

# Additional Tips::

01 -
  • It tastes like you spent time in the kitchen when really you spent about fifteen minutes.
  • The warm cheese against cool, creamy avocado creates this textural magic that's honestly addictive.
  • It works for breakfast, lunch, or that weird dinner when you're not sure what you're in the mood for.
02 -
  • Medium heat is your friend—go higher and the outside burns before the cheese melts, go lower and you'll be standing there forever.
  • Buy avocados a day or two before you plan to make this; perfectly ripe is a narrow window that vanishes quickly.
03 -
  • Use softened butter rather than cold butter straight from the fridge—it spreads evenly and gives you better control over coverage.
  • Press gently while cooking so the bread makes contact with the heat, but not so hard that you squeeze out the filling.
